The cheeks are like miniature briskets, incredibly fatty and we all know fat = taste!
So here's a recipe that's perfect for pulled beef tacos........and surprisingly great with scrambled eggs all wrapped up too.
WHAT YOU WILL NEED
4 x Beef Cheeks
1.5 cups of beef stock
0.5 cup of beer
1 x Brown onion
1 tbsp minced garlic
1 tbsp ground cumin
1 tsp ground goriander
Your favourite soft tacos
Your favourite taco sauce
Your favourite homemade salsa (no i didn't include a recipe, come on man, its SALSA)
WHAT TO DO
Step 1: The Trimmening
Set up your grill for indirect grilling high heat 205c (400f). While that's heating up trim all surface fat off the cheeks and season with salt and pepper.
In a deep stainless or foil pan mix the beer, stock, onion, garlic and spices together. Throw the browned cheeks in and toss well. Wrap tightly in foil and place back in the cooker indirect. Maintain a temp of 175c (350f) for at least 3 hours
After the cheeks have been in the braise for 3 hours check tenderness with a fork. If they pull apart easily then you're set. If not keep checking in 30 minute intervals.
Once done pull apart and toss through the braise. Assemble tacos and enjoy!
