These are a delicious side that goes with any barbecue main or even to have for lunch when you still have another 9 hours of cooking left. Also a talking point for drunk friends, or even people with basic rationale 'Atomic Buffalo Turds? What?'
What you will need
5 x Jalapenos cut in half lengthways creating 10 half Jalapenos, get it?
1/3 cup cream cheese
1 teaspoon garlic granules
1 teaspoon onion flakes
1 Tablespoon of BBQ Seasonings or Rub
10 slices streaky bacon (if you get anything over 3cm wide half them lengthways)
What to do
Step 1- The Slicening
Slice Jalapenos in half lengthways and carefully scoop out seeds and white flesh with a spoon, discard......and wash your hands before doing anything else! like rubbing your eyes.....like this idiot did.
Combine the Cheese, Garlic and Onion in a bowl and carefully spoon desired amount into each jalapeno. I go for level with the slice but you can go a bit more if you want. The possibilities are endless in this step, combine cheeses, add cooked sausage, add bacon bits........get creative.
Wrap each stuffed Jalapeno half in a slice of bacon. Hold in place with a toothpick (neat wrapping isn't my strength) and sprinkle with some seasoning. I used my rib rub!
Put those babies on a well greased and/or hot grill grate in the smoker and smoke at 135c (275f) until that bacon crisps up! These got smoked with cherry chunks over gidgee lump.
Also these ABT's went in with a brisket that had just been wrapped 7 or 8 hours in, Be sure to wrap any other meats if these are going in towards the end of the cook because you don't want to over smoke your main meat!
Once bacon is crisp, pull and serve after resting for 5 minutes. These have a bit of kick on the tail end but delicious i tells ya.
